Ingredients
For the Zucchini:
3 medium zucchinis, sliced into ¼-inch thick rounds
2 tbsp olive oil
½ cup grated Parmesan cheese
½ tsp garlic powder
½ tsp Italian seasoning
¼ tsp salt
¼ tsp black pepper
Optional Garnish:
Chopped fresh parsley
Lemon wedges for serving
Instructions
Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it with non-stick spray.
Step 2: Prepare the Zucchini
In a large bowl, toss the sliced zucchini with olive oil until evenly coated.
Step 3: Season
In a small bowl, mix together the Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
Sprinkle the Parmesan mixture over the zucchini slices and toss gently to coat.
Step 4: Arrange on the Baking Sheet
Place the zucchini slices in a single layer on the prepared baking sheet.
Make sure they’re not overlapping to help them bake evenly and get crispy.
Step 5: Bake
Bake in the preheated oven for 12–15 minutes, or until the zucchini is tender and the Parmesan is golden and crispy.
Step 6: Serve
Remove from the oven and sprinkle with fresh parsley if desired.
Serve warm with lemon wedges on the side for a bright, fresh finish.
Notes
Use Fresh Zucchini – Firm, medium-sized zucchinis work best.
Don’t Overcrowd – Give the slices space so they crisp up instead of steaming.
Cut Evenly – Uniform slices ensure even baking.
Watch Closely – Parmesan can brown quickly, so keep an eye on the last few minutes.
