Ingredients

For the Cookies:

  • 2 cups all-purpose flour

  • ½ cup unsweetened cocoa powder

  • 1½ tsp baking soda

  • ½ tsp salt

  • 1 cup granulated sugar

  • ½ cup unsalted butter, softened

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup buttermilk

  • Red and blue gel food coloring

For the Cream Filling:

  • ½ cup unsalted butter, softened

  • 1½ cups powdered sugar

  • 1 tsp vanilla extract

  • 12 tbsp milk or cream

  • 1 jar (7 oz) marshmallow creme

For Decoration (optional):

  • Red, white, and blue sprinkles

  • Edible glitter or colored sugar


Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.

  3. In another bowl, cream butter and sugar until fluffy.

  4. Beat in egg and vanilla.

  5. Add buttermilk alternately with the flour mixture until just combined.

  6. Divide the batter into two bowls and tint one red and one blue with food coloring.

Step 2: Bake the Cookies
7. Use a scoop or spoon to drop uniform amounts of batter onto prepared baking sheets, spacing 2 inches apart.
8. Bake for 8–10 minutes or until tops spring back when touched.
9. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Step 3: Make the Cream Filling
10. In a bowl, beat butter until smooth.
11. Add powdered sugar gradually and mix until fluffy.
12. Mix in vanilla, milk, and marshmallow creme until well combined.

 

Step 4: Assemble the Whoopie Pies
13. Pair up cookies by size.
14. Spread or pipe filling onto the flat side of one cookie.
15. Top with the second cookie, pressing gently.
16. Roll the edges in sprinkles if desired.

Notes

Chill Dough Slightly – For rounder, more uniform cookies.
Don’t Overmix – Keeps the texture tender.
Use Gel Food Coloring – Bold colors without thinning the batter.
