  • ¼ cup grated Parmesan cheese (or plant-based alternative)

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp Italian seasoning

  • Salt and black pepper to taste

  • Optional: 2 tbsp flour + ¼ cup milk or plant-based milk for breading


Instructions

Step 1: Prepare the Eggplant

  1. Wash the eggplant and slice into ½-inch thick rounds or sticks.

  2. Lay slices on paper towels and sprinkle with salt. Let sit for 10-15 minutes to draw out moisture and reduce bitterness.

  3. Pat dry with clean paper towels.

Step 2: Set Up Your Breading Station

  1. In one bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, Italian seasoning, salt, and pepper.

  2. In a second bowl, add flour.

  3. In a third bowl, pour milk or plant-based milk.

Step 3: Bread the Eggplant Slices

  1. Dip each eggplant slice in flour, then milk, then coat in the breadcrumb mixture.

  2. Press gently to ensure the coating sticks well.

Step 4: Air Fry the Eggplant

  1. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.

  2. Lightly spray the air fryer basket with oil.

  5. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
