- 4 medium Yukon Gold or Russet potatoes
- 3 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional, for extra flavor)
- ½ teaspoon dried thyme or rosemary
- ¼ cup grated parmesan cheese (optional)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Step 1: Prepare the Potatoes
- Wash and dry the potatoes. Do not peel them.
- Place each potato between two wooden spoons or chopsticks—this helps prevent cutting all the way through.
- Using a sharp knife, slice thin cuts about ⅛-inch apart, stopping just before the bottom.
Step 2: Season the Potatoes
- In a small bowl, mix the melted butter, olive oil, minced garlic, salt, black pepper, paprika, and thyme.
- Using a pastry brush, coat the potatoes generously with the mixture, making sure to get between the slices.
Step 3: Air Fry the Potatoes
- Preheat the air fryer to 375°F (190°C).
- Place the potatoes in the air fryer basket, leaving space between them.
- Cook for 25-30 minutes, brushing with more butter mixture halfway through.
- After 30 minutes, check for doneness—potatoes should be crispy on the outside and soft inside. If needed, cook for an additional 5-10 minutes.
Step 4: Add the Final Touches
- Sprinkle with parmesan cheese in the last 5 minutes of cooking for a crispy cheesy crust.
- Remove from the air fryer and garnish with fresh parsley.
