Instructions

Step 1: Prep the Potatoes
Wash the potatoes thoroughly. Peel if desired, but skins add flavor and texture.
Using a mandoline or sharp knife, slice the potatoes as thin as possible (about 1/16-inch thick).
Uniform slices help ensure even cooking.

Step 2: Soak and Dry
Place the sliced potatoes in a large bowl of cold water.
Soak for at least 20–30 minutes to remove excess starch—this helps them crisp up beautifully.
Drain and pat dry thoroughly using paper towels or a clean towel.

Step 3: Season the Chips
In a dry bowl, toss the potato slices with olive oil and salt.
Add any additional seasonings if desired. Toss until each slice is lightly coated.

Step 4: Air Fry in Batches
Preheat your air fryer to 360°F (182°C) for 2–3 minutes.
Arrange the potato slices in a single layer in the air fryer basket—don’t overlap.
Air fry at 360°F for 10–15 minutes, flipping halfway through.
Watch closely in the last few minutes—chips can go from golden to burnt quickly.
Remove and cool on a wire rack while you cook the next batch.

Step 5: Serve & Enjoy
Let the chips cool for a few minutes—they’ll continue to crisp as they cool.
