Ingredients
For the Dough:

450 g (3 ½ cups) all-purpose flour

60 g (¼ cup) sugar

1 packet (7 g / 2 ¼ tsp) active dry yeast

1 tsp salt

240 ml (1 cup) warm milk

60 g (¼ cup) unsalted butter, melted

1 egg
For the Almond Filling:

100 g (1 cup) almond flour (finely ground almonds)

60 g (½ cup) powdered sugar

60 g (¼ cup) unsalted butter, softened

1 tsp almond extract
-
1 egg white (or 1 tbsp milk to keep it lighter)
For the Cinnamon Sugar:

100 g (½ cup) brown sugar

1 tbsp ground cinnamon
-
2 tbsp butter, melted (for brushing)
For the Almond Glaze:

100 g (¾ cup) powdered sugar
-
2 tbsp milk
-
½ tsp almond extract
For Topping:

30 g (¼ cup) sliced almonds, lightly toasted

Optional: extra powdered sugar for dusting
Instructions
Step 1: Make the Dough

In a bowl, combine warm milk and yeast. Let sit 5–10 minutes until foamy.

Add sugar, melted butter, egg, and salt. Mix well.

Gradually add flour and knead for 6–8 minutes until dough is smooth.

Cover and let rise for 1 hour or until doubled in size.
Step 2: Prepare Almond Filling

In a bowl, beat together almond flour, powdered sugar, softened butter, almond extract, and egg white or milk until smooth.

Set aside or refrigerate until needed.
Step 3: Roll and Fill the Dough

On a floured surface, roll dough into a rectangle (about 30×40 cm / 12×16 in).

Brush with melted butter.

Spread almond filling evenly over the dough.

Sprinkle with cinnamon sugar.
Step 4: Shape and Slice Rolls

Roll dough up tightly from the long edge.

Slice into 12 even rolls using a sharp knife or thread.
