Dry Ingredients:

  • 2 cups rolled oats (not quick oats)

  • 1 ½ tsp ground cinnamon

  • ½ tsp ground nutmeg

  • 1 ½ tsp baking powder

  • ¼ tsp salt

Wet Ingredients:

  • 2 large eggs

  • ½ cup unsweetened applesauce

  • 1/3 cup maple syrup or honey

  • 1 ¾ cups milk (dairy or plant-based)

  • 1 tsp vanilla extract

  • 2 tbsp melted butter or neutral oil

Add-ins:

  • 2 apples, peeled and diced (e.g. Granny Smith or Honeycrisp)

  • ½ cup chopped walnuts or pecans (optional)

  • Optional: ¼ cup raisins or dried cranberries

Topping (optional):

  • 1 tbsp brown sugar

  • Extra cinnamon

  • A drizzle of maple syrup when serving


Instructions

Step 1: Preheat the Oven & Grease the Dish

  1. Preheat your oven to 350°F (175°C).

  2. Lightly grease your baking dish with butter or cooking spray.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, combine the oats, cinnamon, nutmeg, baking powder, and salt.

  2. Stir to evenly distribute the spices and baking powder.

Step 3: Mix the Wet Ingredients

  1. In another bowl, whisk together the eggs, applesauce, maple syrup, milk, vanilla, and melted butter.

  2. Whisk until well combined.

Step 4: Combine Wet and Dry Ingredients

  1. Pour the wet mixture into the dry mixture and stir until fully incorporated.

  2. Fold in the diced apples and any optional add-ins like nuts or raisins.

Step 5: Pour into Baking Dish & Add Toppings

  1. Pour the mixture evenly into the prepared baking dish.

  2. Optional: Sprinkle brown sugar and a little extra cinnamon on top for a sweet crust.

Step 6: Bake the Oatmeal

  1. Bake in the preheated oven for 35–40 minutes, or until the top is golden and the center is set.

  2. A toothpick should come out mostly clean with a few moist crumbs.

Step 7: Cool Slightly & Serve

 

  1. Let the baked oatmeal rest for 5–10 minutes before slicing.

  2. Serve warm with a splash of milk or drizzle of maple syrup.

Notes

Use Old-Fashioned Rolled Oats – They give the best texture and don’t get mushy.
Don’t Overbake – It continues to set while cooling.
Customize It – Add your favorite nuts, fruits, or spices.
Make It Ahead – Prep and refrigerate the mixture overnight, then bake fresh.
Double the Recipe – Make in a 9×13 pan for a crowd.
