Ingredients
• 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
• 1 tbsp olive oil
• 1 small yellow onion, finely chopped
• 3 cloves garlic, minced
• 1 tsp Italian seasoning
• ½ tsp salt
• ¼ tsp black pepper
• 1 cup long-grain white rice (uncooked)
• 2 cups low-sodium chicken broth
• ½ cup milk (or half-and-half for extra creaminess)
• ½ cup cream cheese, softened
• ½ cup shredded mozzarella or parmesan
• 1 tbsp fresh parsley or basil, chopped (optional, for garnish)
Instructions
In a large skillet, heat olive oil over medium-high heat.
Add the sliced chicken and cook for 4–5 minutes, until golden and cooked through.
Season with salt, pepper, and Italian seasoning.
Transfer chicken to a plate and set aside.
Step 2: Sauté the Onion & Garlic
In the same skillet, add a bit more oil if needed.
Sauté the chopped onion over medium heat for 3 minutes until softened.
Add garlic and cook for another 30 seconds until fragrant.
Step 3: Cook the Rice
Stir in the uncooked rice and toast for 1 minute to enhance flavor.
Pour in the chicken broth and bring to a boil.
Reduce heat to low, cover, and simmer for 15–18 minutes, or until rice is tender and liquid is mostly absorbed.
Step 4: Make It Creamy
Stir in the milk and softened cream cheese.
Continue stirring gently until the cream cheese melts into the rice, creating a smooth and creamy base.
Step 5: Return the Chicken & Finish
Add the cooked chicken back to the skillet along with mozzarella or parmesan cheese.
Stir everything together and cook for 2–3 more minutes until heated through and creamy.
Taste and adjust seasoning if needed.
Step 6: Garnish & Serve
Top with chopped fresh herbs if desired.
Serve warm as a hearty main dish with a side of greens or steamed veggies.
