  • 1/3 cup applesauce
  • 1/2 cup apple cider
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup softened butter
  • 12 tbsp water or milk or more apple cider
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, mix oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
  3. In another bowl, whisk together melted coconut oil, brown sugar, applesauce, apple cider, vanilla extract, and eggs until smooth.
  4. Gradually combine wet and dry ingredients until just mixed; avoid overmixing.
  5. Fill cupcake liners two-thirds full and bake for about 22 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. For the frosting: Beat softened butter until creamy; gradually add powdered sugar and mix in water or milk along with vanilla and spices until fluffy.
  7. Frost cooled cupcakes generously.
