Ingredients
- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter, diced
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup lightly packed brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch allspice
- ¼ teaspoon coarse kosher salt
- 1–¾ cups all-purpose flour
Instructions
- Preheat your oven to 350°F and prepare a 9” square baking dish by buttering it and lining it with parchment paper.
- In a sauté pan, boil the apple cider until reduced by half (about 5 minutes). Remove from heat and whisk in diced butter until melted.
- Whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt in a medium bowl.
- Gradually add the reduced cider mixture to the wet ingredients and mix well.
- Gently fold in the flour until just combined; avoid overmixing.
- Pour the batter into the prepared dish and spread evenly.
- Bake for 22–25 minutes or until golden brown.
- Let cool briefly before brushing with melted butter and sprinkling with cinnamon sugar.
