  • 2 1/2 teaspoons baking powder
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 2/3 cup light brown sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons unsalted butter, melted
  • 2 cups finely diced apples (Golden Delicious or yellow apples)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a greased muffin tin with liners.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, mix light brown sugar, eggs, milk, and vanilla until smooth. Stir in melted butter.
  4. Gently fold in dry ingredients until just combined; some lumps are okay.
  5. Toss diced apples in reserved flour and add to the batter, folding gently.
  6. Fill muffin liners three-quarters full and sprinkle with cinnamon-sugar topping.
  7. Bake for about 15 minutes or until golden brown and a toothpick comes out clean.
  8. Cool slightly before serving warm or at room temperature.
