- 1 ¼ cup (300 ml) Heavy cream (35% fat content)
- 1 ¼ cup (300 ml) Full-fat milk
- 2 tablespoon (40 grams) clear runny honey
- ½ cup (100 grams) sugar
- 2 tablespoon (20 grams) cornstarch
- 3 Large apples, peeled, cored, and diced (12oz/350 grams)
- 3 tablespoon (45 ml) water
- 3 tablespoon (36 grams) sugar
- ¼ cup (30 grams) raisins
- ¾ teaspoon ground cinnamon
- ¼ cup (30 grams) Lightly toasted pecans or walnuts, chopped
- 2–3 waffle cones, crumbled (optional)
Instructions
- Prepare your ice cream maker by freezing the bowl for at least 16 hours.
- In a small bowl, mix sugar and cornstarch; set aside.
- In a large saucepan, heat milk, heavy cream, and honey until simmering. Gradually whisk in the sugar-cornstarch mixture, cooking on low heat for about 3 minutes until slightly thickened. Remove from heat and cool.
- Cook diced apples with sugar, water, cinnamon, and raisins in a small saucepan over low heat for about 45 minutes until soft. Cool before refrigerating.
- Once cooled, churn the cream mixture in your ice cream maker according to instructions (20-30 minutes).
- Freeze the churned ice cream in an airtight container for several hours before serving.
