Ingredients
- 5 medium Granny Smith apples, peeled, cored, and finely diced
- ¼ cup light brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon cornstarch
- 22–24 egg roll wrappers
- 8 ounces cream cheese, at room temperature
- Cooking oil or cooking spray
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine diced apples, brown sugar, cinnamon, and cornstarch. Mix until well coated.
- Lay out egg roll wrappers and spread about 2 teaspoons of cream cheese in the center of each. Top with approximately 2 tablespoons of the apple mixture.
- Fold the edges over the filling and roll tightly from the bottom edge to seal. Use water on your fingers if needed.
- Place each egg roll on the prepared baking sheet and spray lightly with oil. Combine granulated sugar and cinnamon; sprinkle over egg rolls.
