  • 5 medium Granny Smith apples, peeled, cored, and finely diced
  • ¼ cup light brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon cornstarch
  • 2224 egg roll wrappers
  • 8 ounces cream cheese, at room temperature
  • Cooking oil or cooking spray
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine diced apples, brown sugar, cinnamon, and cornstarch. Mix until well coated.
  3. Lay out egg roll wrappers and spread about 2 teaspoons of cream cheese in the center of each. Top with approximately 2 tablespoons of the apple mixture.
  4. Fold the edges over the filling and roll tightly from the bottom edge to seal. Use water on your fingers if needed.
  5. Place each egg roll on the prepared baking sheet and spray lightly with oil. Combine granulated sugar and cinnamon; sprinkle over egg rolls.
  6. Bake for 15-17 minutes or until golden brown and crispy. Serve warm with caramel sauce for dipping.
