  • 9 tbsp Pecorino Romano cheese
  • 6 eggs
  • 300 grams Carnaroli rice
  • 250 grams Fiordilatte mozzarella cheese
  • 70 grams butter
  • Sunflower oil (for frying)
  • Salt and pepper (to taste)

Instructions

  1. Prepare saffron by steeping in boiling water and set aside.
  2. In a large pot, sauté chopped onions in olive oil, then add water and rice. Cook until nearly done.
  3. Stir in saffron-infused water, then mix in butter and Pecorino Romano until creamy.
  4. Cool the rice mixture on a baking tray.
  5. Cook turkey turkey bacon until crispy.
  6. Beat eggs with some turkey bacon oil and mix in cheese and pepper.
  7. Form arancini by placing rice in your hand, adding filling, and shaping into balls.
  8. Freeze the balls for easier frying.
  9. Bread each ball in egg and breadcrumbs, then fry until golden brown.
