Ingredients
Ingredients You’ll Need
-
1 sheet puff pastry, thawed
-
1 bunch fresh asparagus, trimmed (about 1 lb)
-
½ cup ricotta or cream cheese
-
¼ cup grated Parmesan cheese
-
1 tsp lemon zest
-
½ tsp garlic powder
-
Salt and pepper, to taste
-
1 egg (for egg wash)
-
1 tbsp olive oil
-
Optional: red pepper flakes, fresh thyme or chives, crumbled feta
Instructions
Step 1: Preheat & Prep Puff Pastry
-
Preheat your oven to 400°F (200°C).
-
Line a baking sheet with parchment paper.
-
Roll out the puff pastry slightly and cut into 4–6 rectangles.
-
Lightly score a ½-inch border around each rectangle (don’t cut through).
-
Prick the center of each tart with a fork to prevent puffing.
Step 2: Mix the Cheese Base
-
In a bowl, combine ricotta or cream cheese, Parmesan, lemon zest, garlic powder, salt, and pepper.
-
Mix until smooth and spreadable.
Step 3: Assemble the Tarts
-
Spread about 1–2 tablespoons of the cheese mixture within the center of each pastry rectangle.
-
Arrange 3–5 asparagus spears on top of the cheese layer (trim to fit if needed).
-
Drizzle asparagus with a little olive oil and sprinkle with additional salt and pepper.
Step 4: Egg Wash & Bake
-
Beat the egg and brush the outer edges of the puff pastry with it.
-
Bake for 18–22 minutes, or until pastry is puffed and golden brown.
-
Let cool slightly before serving.
Step 5: Garnish and Serve
-
Sprinkle with optional toppings like red pepper flakes, chopped herbs, or a light dusting of Parmesan.
-
Serve warm or at room temperature.
Notes
Thaw Puff Pastry Correctly – Keep cold but pliable for best results.
Trim Asparagus Evenly – Ensures a tidy look and even baking.
Don’t Overload – A light layer of cheese and a few spears keeps things crisp.
Use Fresh Parmesan – Adds more flavor than pre-grated versions.
Eat the Same Day – Best served fresh for crispness.
