  • 1 ½ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp Kosher salt
  • ½ cup granulated sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2/3 cup whole milk
  • ¼ cup unsalted butter (melted)
  • 2 tsp apple cider vinegar
  • 1 medium apple (peeled and diced)
  • 1/4 cup vegetable oil (for the muffin pan)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease the muffin tin with vegetable oil.
  2. In a large bowl, mix all dry ingredients: flour, baking powder, baking soda, salt, sugar, cinnamon, and nutmeg.
  3. Make a well in the center of the dry mixture and add eggs, milk, and vanilla. Whisk until smooth.
  4. Stir in melted butter until fully combined.
  5. Heat the greased muffin pan in the oven for about 5 minutes.
  6. Add diced apples and apple cider vinegar to the batter just before filling muffin cups.
  7. Pour batter into hot muffin tins, filling them about halfway.
  8. Bake for 18–20 minutes until golden brown; check with a toothpick for doneness.
  9. Allow to cool slightly on a wire rack before glazing.
