  • 1 pound asparagus (ends trimmed)
  • 1 pound large raw shrimp, peeled and deveined
  • 1 tablespoon garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chicken stock (divided)
  • 2 tablespoons lemon juice (divided)
  • ¼ cup cold unsalted butter, cubed (divided)
  • 2 tablespoons parsley, minced (for garnish)

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare four large pieces of heavy-duty aluminum foil.
  3. Divide the trimmed asparagus among each foil pack.
  4. In a mixing bowl, combine shrimp with garlic, salt, black pepper, and optional red pepper flakes.
  5. Evenly distribute the seasoned shrimp on top of the asparagus in each pack.
  6. Drizzle each packet with chicken stock and lemon juice; top with cubed butter.
  7. Seal each foil pack tightly to trap steam.
  8. Bake seam-side up on a baking sheet for about 15-20 minutes until shrimp are opaque pink and curled into a 'c' shape.
  9. Serve hot with additional lemon wedges and garnish with parsley.
