  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon toasted sesame oil
  • 2 tablespoons vegetable oil
  • 8 ounces sirloin steak (cut into strips)
  • 1/2 cup diced onion
  • 1 cup frozen peas and carrots
  • 2 large eggs (lightly beaten)
  • 3 cups cooked and cooled rice

Instructions

  1. In a bowl, mix dark soy sauce, soy sauce, oyster sauce, and sesame oil; set aside.
  2. Heat 1 tablespoon vegetable oil in a skillet over medium-high heat; sear beef until charred (3-5 minutes). Remove beef from pan.
  3. Add another tablespoon of oil; sauté onions until softened (about 2 minutes).
  4. Stir in peas and carrots; cook until slightly softened (about 3 minutes), then return beef to pan.
  5. Scramble beaten eggs in the same pan until fully cooked (about 1 minute); add to the beef and veggies.
  6. Add remaining oil and cold rice; let sit undisturbed for about 2 minutes for slight charring.
  7. Combine everything in the skillet with the prepared sauce; stir well and cook for an additional 3 minutes.
  8. Serve hot, garnished with sliced scallions if desired.
