  • 1 pound flank steak (thinly sliced)
  • 1 teaspoon cornstarch
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon peanut oil (divided)
  • 2 tablespoons oyster sauce
  • 1 pound lo mein or ramen noodles
  • 1 cup mushrooms (sliced)
  • 2 cups Napa cabbage (shredded)
  • 1 medium carrot (julienned)
  • 1 medium red bell pepper (julienned)
  • 1 cup snow peas
  • 1 cup bean sprouts
  • Green onions (for garnish)

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, cornstarch, peanut oil, and baking soda. Marinate the beef in this mixture for about 10 minutes.
  3. Heat one tablespoon of peanut oil in a wok over medium-high heat. Stir-fry the marinated beef for about 3 to 4 minutes until browned. Remove and set aside.
  4. In the same wok, add another tablespoon of peanut oil and stir-fry mushrooms, cabbage, carrots, and bell pepper for about 2 minutes until softened.
  5. Add snow peas, bean sprouts, cooked beef, and noodles to the wok. Pour over oyster sauce and toss everything together for an additional minute until well combined.
  6. Serve hot garnished with sliced green onions.
