  • 3 pounds chuck roast (diced)
  • 1 yellow onion (diced)
  • 3 celery stalks (diced)
  • 3 carrots (diced)
  • 2 russet potatoes (peeled and diced)
  • 1 tablespoon minced garlic
  • 4 tablespoons olive oil
  • 1 teaspoon Worcestershire sauce
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • Onion powder
  • Garlic powder
  • Beef bouillon powder
  • Salt
  • Pepper
  • All-purpose flour
  • Cornstarch

Instructions

  1. In a large bowl, coat diced chuck roast with olive oil, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. Dust with flour.
  2. Heat olive oil in a Dutch oven and sear beef chunks until browned on all sides. Remove and set aside.
  3. Add a splash of beef broth to deglaze the pot. Sauté onions, carrots, and celery for about 4 minutes; then add minced garlic and sauté for another minute.
  4. Mix in tomato paste and remaining beef broth along with beef bouillon powder. Return seared beef to the pot and let simmer covered on low heat for an hour.
  5. Add diced potatoes and cook for an additional 15–20 minutes until tender.
  6. For thickening, mix cornstarch with cold water to create a slurry and stir it into the stew until desired thickness is reached.
