  • 1/2 can refried beans
  • 1/2 white onion (diced)
  • 1 can of hatch chilies (4 oz)
  • 1 tablespoon kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • Flour or corn tortillas
  • Shredded jack cheese
  • Homemade pico de gallo

Instructions

  1. Heat a skillet over medium heat. Add ground chuck and cook until browned, breaking it apart as it cooks. Drain excess grease.
  2. Stir in diced onion and spices (salt, garlic powder, chili powder) and cook until onions soften (about 2-3 minutes).

  4. In a cast iron skillet, toast tortillas on both sides until golden brown. Sprinkle shredded jack cheese on one side of each tortilla.
