Ingredients
For the Cream Filling:
1 cup heavy whipping cream (cold)
4 oz cream cheese (softened)
¼ cup powdered sugar
1 tsp vanilla extract
Zest of ½ lemon (optional for brightness)
For the Berry Mixture:
1 cup strawberries, hulled and sliced
½ cup blueberries
½ cup raspberries
1 tbsp honey or maple syrup
1 tsp lemon juice
For the Croissants:
6 large butter croissants (store-bought or homemade)
1 tbsp unsalted butter (melted, for brushing)
Powdered sugar, for dusting
Fresh mint leaves, for garnish (optional)
Instructions
Step 1: Make the Cream Filling
In a large bowl, beat the softened cream cheese until smooth.
Add powdered sugar, vanilla extract, and lemon zest (if using), and beat until combined.
In a separate bowl, whip the cold heavy cream until soft peaks form.
Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
Refrigerate the cream while preparing the rest.
Step 2: Prepare the Berries
In a bowl, combine strawberries, blueberries, and raspberries.
Drizzle with honey (or maple syrup) and lemon juice.
Gently toss to coat the berries evenly. Set aside to macerate for 10–15 minutes.
Step 3: Slice & Toast the Croissants
Preheat oven to 350°F (175°C).
Slice each croissant horizontally, leaving one edge intact like a hinge.
Lightly brush the insides with melted butter.
Place on a baking sheet and toast for 5–7 minutes until just crisp and warm.
Step 4: Assemble the Croissants
Let the croissants cool slightly, then spoon or pipe generous dollops of cream into each.
Add a spoonful of the berry mixture on top of the cream.
Close the croissant gently. You can leave it slightly open to showcase the filling.
Step 5: Garnish and Serve
Dust with powdered sugar using a fine sieve.
Garnish with a few extra berries and mint leaves if desired.
