  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line your muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or melted butter), and vanilla until combined.
  4. Gradually add the dry ingredients to the wet mixture until just blended.
  5. In another bowl, beat cream cheese until smooth; add sugar, egg yolk, and vanilla and beat until well combined.
  6. Fill muffin tins three-quarters full with pumpkin batter; top each with about one tablespoon of cream cheese mixture.
  7. Use a toothpick to swirl the cream cheese into the batter gently.
  8. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean with just a few moist crumbs.
  9. Cool for about 10 minutes before serving.
