1½ cups frozen mixed vegetables (peas, carrots, corn, green beans)
-
1 can (10.5 oz) cream of chicken soup
-
½ cup chicken broth
-
½ tsp garlic powder
-
½ tsp onion powder
-
Salt and pepper to taste
For the Bisquick Topping:
-
1 cup Bisquick baking mix
-
½ cup milk
-
1 large egg
Optional Add-Ins:
-
½ small onion, finely chopped and sautéed
-
1 tsp dried thyme or parsley for extra flavor
-
1 cup sautéed mushrooms
Instructions
Step 1: Preheat Your Oven
Preheat your oven to 400°F (200°C).
Grease your baking dish with nonstick spray or a light coat of butter.
Step 2: Mix the Filling
In a medium bowl, stir together the shredded chicken, frozen vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
Mix until fully combined and creamy.
Step 3: Fill the Baking Dish
Pour the chicken and veggie mixture into the prepared dish.
Spread it out evenly using a spatula or spoon.
Step 4: Prepare the Bisquick Topping
In a separate bowl, whisk together the Bisquick mix, milk, and egg until smooth.
Pour the batter over the filling and gently spread it to cover most of the surface. It doesn’t have to be perfect—it will spread as it bakes.
Step 5: Bake
Place the dish in the oven and bake for 30–35 minutes, or until the top is golden brown and the filling is bubbly around the edges.
Let it rest for 5 minutes before serving.
Notes
Use Rotisserie Chicken – Saves time and adds flavor.
Let It Rest – Letting it cool slightly helps the filling thicken before serving.
Customize Veggies – Use your favorite mix or leftovers from the fridge.
Double for a Crowd – Easily scale the recipe up for a 9×13-inch dish.
Don’t Overmix the Batter – Stir just until smooth for the fluffiest topping.
