  • 2 lbs boneless skinless chicken thighs, cut into 1-inch cubes
  • 1/2 cup cornstarch
  • 1 tablespoon plus 1/3 cup low-sodium soy sauce
  • 45 tablespoons vegetable oil
  • 12 oz mixed mushrooms (shiitakes, oysters, cremini, button), thinly sliced
  • 1 small bunch green onions, sliced into 1-inch pieces
  • 3 medium cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon light brown sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons rice grape juice vinegar

Instructions

  1. In a large bowl, toss chicken cubes with cornstarch, 1 tablespoon soy sauce, kosher salt, and ground black pepper.
  2. Heat 2 tablespoons vegetable oil in a skillet or wok over medium-high heat. Sear the chicken in batches until golden brown; remove and set aside.
  3. In the same pan, add remaining oil and sauté mushrooms and green onions until tender. Add garlic and ginger; cook until fragrant.
  4. Whisk together the remaining soy sauce, brown sugar, sesame oil, and rice grape juice vinegar in a bowl.
  5. Return cooked chicken to the pan along with the sauce mixture; stir-fry until everything is well coated and heated through.
  6. Serve hot over steamed rice or noodles.
