Ingredients
For the Filling:
4 cups fresh or frozen blackberries
¾ cup granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch (helps thicken the filling)
½ tsp vanilla extract
For the Batter:
1 cup all-purpose flour
¾ cup granulated sugar
2 tsp baking powder
¼ tsp salt
¾ cup milk
½ cup unsalted butter, melted
½ tsp cinnamon (optional)
Optional Toppings:
Vanilla ice cream
Whipped cream
Powdered sugar for dusting
Mint sprigs for garnish
Instructions
Step 1: Preheat & Prep the Dish
-
Preheat oven to 350°F (175°C).
-
Lightly grease a baking dish with butter or nonstick spray.
Step 2: Mix the Blackberry Filling
-
In a bowl, toss blackberries with sugar, lemon juice, cornstarch, and vanilla.
-
Let sit while you prepare the batter—this helps release juices and blend flavors.
Step 3: Make the Batter
-
In another bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
-
Add milk and stir until smooth.
-
Pour in melted butter and mix gently to combine.
Step 4: Assemble the Cobbler
-
Pour the batter into the prepared baking dish.
-
Spoon the blackberry mixture evenly over the batter—don’t stir. The batter will rise around the berries as it bakes.
Step 5: Bake the Cobbler
-
Bake for 45–55 minutes, or until the top is golden brown and the filling is bubbly.
-
A toothpick inserted into the batter should come out clean (avoid testing directly in fruit).
Step 6: Cool & Serve
-
Let the cobbler rest for at least 10–15 minutes before serving—this allows the juices to thicken.
-
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Don’t Overmix the Batter – Just stir until smooth for a tender crumb.
Use Fresh or Frozen Berries – No need to thaw if using frozen.
Let It Rest – This helps the filling set and intensifies the flavors.
Add a Crunch – Sprinkle sugar on top before baking for a crisp finish.
Make It Your Own – Add raspberries, blueberries, or peaches for a mixed fruit cobbler.
