Ingredients
- 1 lb. Mafaldine noodles (or fettuccini/linguini)
- 3 chicken breasts
- 4 tablespoons olive oil
- 6 tablespoons butter
- 6–8 cloves garlic, minced
- 2 cups heavy whipping cream
- 1.5 cups shredded parmesan cheese
- 4 tablespoons blackened seasoning (see below)
- Salt and pepper
Instructions
- Pound chicken to an even thickness and rub with olive oil. Season both sides liberally with blackened seasoning.
- Heat a skillet over medium-high heat and add olive oil. Cook the chicken for 3-4 minutes until it develops a dark amber color, then flip and reduce heat to low. Add butter and minced garlic; cook until the chicken reaches an internal temperature of 165°F.
- Remove the chicken from the skillet, cover with foil, and let rest before slicing.
- In the same skillet, melt remaining butter, add garlic, sauté for 1–2 minutes, then stir in cream and additional blackened seasoning. Allow to simmer until thickened.
- Cook noodles according to package instructions; reserve some pasta water before draining.
- Stir parmesan into the sauce until melted, then mix in reserved pasta water.
- Combine noodles with the sauce and top with sliced chicken before serving.
