Ingredients
-
2 small flour tortillas (or whole wheat)
-
¼ cup cream cheese, softened
-
1 tbsp honey or maple syrup (optional)
-
½ cup fresh blueberries
-
½ tsp cinnamon (optional)
-
1 tsp butter or coconut oil (for cooking)
Optional Add-ins:
-
Sliced strawberries, raspberries, or bananas
-
A sprinkle of granola for crunch
-
Nut butter for extra richness
-
Powdered sugar for dusting
Instructions
Step 1: Prepare the Filling
In a small bowl, mix softened cream cheese with honey and cinnamon until smooth and creamy.
Step 2: Assemble the Quesadilla
Spread the cream cheese mixture evenly over one tortilla.
Scatter the blueberries evenly across the cream cheese.
Top with the second tortilla to make a sandwich.
Step 3: Cook the Quesadilla
Heat butter or coconut oil in a skillet over medium heat.
Place the quesadilla in the skillet and cook for 2–3 minutes per side, or until golden brown and crispy.
Step 4: Slice & Serve
Remove from the pan and let cool slightly.
Slice into wedges and serve warm.
Optional: Dust with powdered sugar or drizzle with extra honey.
Notes
Use Soft Tortillas – They crisp up nicely without cracking.
Don’t Overfill – Too many berries can make it harder to flip.
Cook Over Medium Heat – Prevents burning before the inside is warm.
Seal the Edges – Press slightly around the edges to help everything stay inside.
Serve Fresh – Best enjoyed warm while the cream cheese is melty.
