Ingredients
- 1 tablespoon olive oil
- 2 cups chopped vegetables (red onion, bell pepper, mushrooms, or broccoli)
- 1 pound turkey sausage (or chicken Chicken Italian sausage)
- 8 eggs
- 2 pinches salt (to taste)
- 2 teaspoons unsalted butter
- 8 burrito-sized tortillas
- 2 cups shredded cheddar cheese (or Monterey jack)
Instructions
- Preheat oven to 375° F if baking immediately.
- Heat olive oil in a nonstick skillet over medium heat. Add chopped vegetables and cook until softened (about 4 minutes). Transfer to a bowl.
- In the same skillet, add turkey sausage and cook until browned. Combine with the cooked vegetables.
- In a mixing bowl, whisk together the eggs and salt until combined.
- Melt butter in the skillet over medium heat. Pour in the egg mixture and scramble gently until fully cooked.
- Combine scrambled eggs with the sausage and vegetable mixture.
- To assemble, place about 1/8 of the filling off-center on each tortilla and sprinkle with cheese. Wrap tightly.
- Serve immediately or bake for 5-10 minutes until warmed through. For freezing: flash freeze assembled burritos on a baking sheet for 2 hours before transferring to zip-top bags.
