For the Fruit Salad:

  • 1 cup strawberries, hulled and halved

  • 1 cup blueberries

  • 1 cup green grapes, halved

  • 1 cup pineapple, diced

  • 1 cup mango, diced

  • 1 large kiwi, peeled and sliced

  • 1 banana, sliced (add just before serving)

  • 1 orange, segmented or cut into chunks

  • 2 tbsp chopped fresh mint (optional for garnish)

For the Citrus-Honey Dressing:

Juice of 1 orange (about ¼ cup)

  • Juice of ½ lemon

  • 1 tbsp honey or maple syrup

  • ½ tsp vanilla extract (optional)


Instructions

Step 1: Prep the Fruit

  1. Wash and dry all the fruit thoroughly.

  2. Hull, slice, dice, or segment each fruit as needed, aiming for similar bite-sized pieces.

  3. Add all fruit (except bananas) to a large mixing bowl.

Step 2: Make the Dressing
4. In a small bowl or measuring cup, whisk together orange juice, lemon juice, honey, and vanilla extract (if using).
5. Taste and adjust sweetness or acidity to your liking.

Step 3: Toss & Finish
6. Pour the citrus-honey dressing over the fruit.
7. Gently toss with a large spoon to combine without breaking up the fruit.
8. Just before serving, fold in sliced banana and garnish with fresh mint.

Step 4: Serve Fresh
9. Serve immediately or refrigerate for up to 2 hours before serving for best freshness.
