  • ½ cup chopped red onion
  • ½ cup chopped bell pepper
  • 4 large eggs
  • salt (to taste)
  • 1 tablespoon butter
  • 4 whole wheat English muffins
  • 4 slices sharp cheddar cheese
  • 4 slices cooked turkey turkey turkey bacon
  • ¾ cup guacamole

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Sauté red onion and bell pepper until softened, about 3 minutes, then set aside.
  2. In a mixing bowl, whisk the eggs with salt. Melt butter in the skillet over medium-low heat; pour in the eggs and sprinkle cooked veggies on top.
  3. Cook until edges set, gently lifting them to allow liquid to flow underneath. Once mostly set, fold the omelet into thirds and cut into four pieces.
