Ingredients
- 4 small russet baked potatoes
- 3 tbsp olive oil
- 3 cups small cut broccoli florets
- 1/2 cup sweet yellow onion (finely diced)
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup sour cream
- 2 cups cheddar cheese (shredded)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Scrub the potatoes under running water, pierce several times with a fork, and microwave on high for about 15 minutes until tender.
- In a skillet, heat 2 1/2 tablespoons of olive oil over medium-high heat. Sauté onions for about 5 minutes until softened.
- Add broccoli florets to the skillet and cook for an additional minute before removing from heat.
- Let potatoes cool slightly, then slice them in half lengthwise and scoop out some flesh while leaving about an 1/8 inch layer inside.
- Brush the insides of each potato shell with the remaining olive oil and bake for about 15 minutes or until golden brown.
- In a mixing bowl, combine sautéed broccoli mixture with sour cream and 1 cup of shredded cheddar cheese. Mix well.
- Fill each potato shell with about 1/3 cup of the broccoli filling, top with remaining cheddar cheese, and bake for an additional five minutes until cheese is melted.
- Serve warm, optionally garnished with sour cream and sliced green onions.
