Ingredients

For the Brownie Crust:
1 box brownie mix (plus eggs, oil, and water as directed)
or
¾ cup unsalted butter, melted
1½ cups granulated sugar
2 large eggs
1 tsp vanilla extract
¾ cup all-purpose flour
½ cup unsweetened cocoa powder
½ tsp salt

For the Cream Cheese Frosting:
8 oz cream cheese, softened
¼ cup unsalted butter, softened
1½ cups powdered sugar
1 tsp vanilla extract

For the Topping:
1 cup strawberries, hulled and sliced
1 kiwi, peeled and sliced
½ cup blueberries
½ cup grapes, halved
1 small mandarin orange, segmented
Fresh mint leaves (optional, for garnish)


Instructions

Step 1: Prepare the Brownie Base
Preheat oven to 350°F (175°C)
Grease and line a round pizza or tart pan with parchment paper
In a bowl, prepare brownie batter (either box mix or homemade)
Spread evenly into the pan and bake for 18–22 minutes, or until a toothpick inserted comes out with a few moist crumbs
Let cool completely before frosting

Step 2: Make the Frosting
In a mixing bowl, beat cream cheese and butter until smooth
Add powdered sugar and vanilla extract and mix until light and fluffy
Chill for 10–15 minutes if frosting is too soft

Step 3: Frost the Brownie
Once brownie base is fully cooled, spread frosting evenly over the top
Leave a slight border around the edges for a clean look

Step 4: Decorate with Fruit
Arrange sliced fruit in a circular or decorative pattern on top of the frosting
Press lightly so they stick without sinking into the frosting
Add mint leaves for a pop of green and freshness if desired

 

Step 5: Slice and Serve
Use a sharp knife to cut into wedges like a pizza
Serve immediately or chill for 30 minutes for a firmer texture
