- 12 ounces dry pasta (Bucatini, Spaghetti, or Linguine)
- ½ cup unsalted butter
- 1 large butternut squash
- Ground ginger, nutmeg, cumin, cayenne (for seasoning)
- 2 cloves garlic (smashed and peeled)
- Fresh sage leaves
- 1 cup whole-milk ricotta (optional)
- ½ cup toasted walnuts (coarsely chopped)
- Kosher salt & pepper (to taste)
- ½ cup freshly grated Parmesan cheese
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Reserve one cup of cooking water before draining.
- In a skillet, melt 2 tablespoons of butter over medium-high heat. Add diced butternut squash seasoned with spices. Cook until caramelized and tender.
- In the same skillet, melt the remaining butter with garlic until light brown. Add sage leaves and fry until crispy; remove them for garnish.
- Whisk reserved pasta water into the butter sauce; add cooked pasta and toss well with Parmesan cheese and butternut squash.
- Serve immediately topped with crispy sage leaves, crushed walnuts, and optional ricotta.
