1 ½ cups all-purpose flour
-
1 tsp baking soda
-
½ tsp salt
-
½ tsp cinnamon (optional, for a warm depth)
Wet Ingredients:
-
3 ripe bananas (mashed)
-
½ cup unsalted butter (melted and slightly cooled)
-
¾ cup brown sugar (light or dark)
-
2 large eggs
-
1 tsp vanilla extract
-
¼ cup plain yogurt or sour cream (adds extra moisture)
Mix-ins:
-
1 cup butterscotch chips
-
½ cup chopped walnuts or pecans (optional for a nutty crunch)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan or line it with parchment paper.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
Set aside.
Step 3: Combine Wet Ingredients
In a large bowl, mash the ripe bananas with a fork until smooth.
Whisk in the melted butter, brown sugar, eggs, vanilla extract, and yogurt until well combined.
Step 4: Make the Batter
Add the dry ingredients into the wet mixture.
Stir gently with a spatula until just combined—do not overmix.
Fold in the butterscotch chips and chopped nuts if using.
Step 5: Pour and Bake
Pour the batter into the prepared loaf pan and smooth the top.
Optional: Sprinkle a few extra butterscotch chips on top for a decorative touch.
Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
Step 6: Cool and Serve
Remove the loaf from the oven and let it cool in the pan for 10-15 minutes.
Transfer to a wire rack to cool completely before slicing.
Enjoy warm or at room temperature.
Notes
Use Overripe Bananas – The riper, the better for flavor and moisture.
Don’t Overmix – Gentle folding keeps the bread light and tender.
Customize It – Add chocolate chips, dried fruit, or a crumb topping.
Check for Doneness – Loaf should feel firm and spring back slightly when touched.
Store Properly – Wrap tightly to maintain freshness.
