Ingredients
- 1 pound large shrimp (peeled and deveined)
- 2 tablespoons canola oil
- 1 large onion (diced)
- 1 tablespoon minced garlic
- ½ cup chopped celery sticks
- 1 red bell pepper (diced)
- 4–5 cups warm chicken stock
- 5 ears of corn (about 3 cups)
- 1 potato (about half pound)
- Creole seasoning
- smoked paprika
- white pepper
- fresh thyme
- flat-leaf parsley
Instructions
- Prepare the corn by removing the husk and cutting the kernels from the cob into a large bowl.
- Season the shrimp generously with Creole seasoning. Heat canola oil in a heavy-bottomed Dutch oven over medium heat and sauté the shrimp for about 3–5 minutes until pink. Set aside.
- In the same pot, sauté diced onions, minced garlic, bay leaf, and thyme until fragrant. Add chopped celery sticks and diced red bell pepper along with smoked paprika. Cook until onions are soft.
- Stir in tomato paste and then pour in warm chicken stock, corn kernels, white pepper, and diced potato.
- Bring to a boil then reduce heat to simmer for 20–30 minutes until potatoes are tender. Return shrimp during the last few minutes of cooking.
- Garnish with chopped flat-leaf parsley before serving hot.
