Ingredients

  • 4 salmon fillets (about 6 oz. each)
  • 1½ cups corn grits
  • 2 jalapenos (diced)
  • 3 cups low-sodium chicken stock (or vegetable broth)
  • 1 cup heavy cream
  • 1½ cups shredded cheddar cheese
  • Olive oil
  • Spices: paprika, garlic powder, oregano, black pepper, onion powder, kosher salt, cayenne pepper

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Sauté diced jalapenos until softened.
  2. Stir in corn grits and salt; gradually whisk in chicken stock and hot water. Simmer on low for about 20 minutes.
  3. Once thickened, mix in heavy cream and cheddar cheese until smooth. Adjust seasoning as needed.
  4. Preheat the grill or grill pan over medium-high heat. Brush salmon fillets with olive oil and season with salt and pepper.
  5. Grill salmon for 4–5 minutes per side until flaky and cooked through.
