- 1½ cups corn grits
- 2 jalapenos (diced)
- 3 cups low-sodium chicken stock (or vegetable broth)
- 1 cup heavy cream
- 1½ cups shredded cheddar cheese
- Olive oil
- Spices: paprika, garlic powder, oregano, black pepper, onion powder, kosher salt, cayenne pepper
Instructions
- Heat olive oil in a medium saucepan over medium heat. Sauté diced jalapenos until softened.
- Stir in corn grits and salt; gradually whisk in chicken stock and hot water. Simmer on low for about 20 minutes.
- Once thickened, mix in heavy cream and cheddar cheese until smooth. Adjust seasoning as needed.
- Preheat the grill or grill pan over medium-high heat. Brush salmon fillets with olive oil and season with salt and pepper.
- Grill salmon for 4–5 minutes per side until flaky and cooked through.
- Serve salmon on a bed of cheesy jalapeno grits and garnish with chopped green onions if desired.
