  • ½ pound fettuccine
  • 1 pound chicken thighs (boneless and skinless)
  • ½ pound medium shrimp (peeled and deveined)
  • ½ pound turkey sausage (sliced)
  • 2 tablespoons olive oil
  • 1 medium onion (sliced)
  • 2 teaspoons minced garlic
  • 23 medium tomatoes (diced)
  • 1 tablespoon cornstarch
  • ½ teaspoon thyme
  • 1 teaspoon smoked paprika
  • 1 tablespoon Creole seasoning
  • 1 medium red bell pepper (sliced)
  • 2 cups chicken broth
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. Season chicken and shrimp with Creole seasoning. Heat olive oil in a heavy-bottomed pan over medium heat.
  3. Sauté shrimp for about 3–5 minutes until pink; remove from the pan.
  4. Add chicken thighs and turkey sausage to the same pan, browning on both sides; set aside with shrimp.
  5. In the same pan, add onions, tomatoes, garlic, and cornstarch. Stir for one minute before adding thyme, smoked paprika, Creole seasoning, bell peppers, chicken broth, chicken, turkey sausage, and Worcestershire sauce.
  6. Bring to a boil then reduce heat to simmer for about 7–10 minutes until slightly thickened.
  7. Combine cooked pasta with the jambalaya mixture before serving. Garnish with fresh parsley.
