Ingredients
- ½ pound fettuccine
- 1 pound chicken thighs (boneless and skinless)
- ½ pound medium shrimp (peeled and deveined)
- ½ pound turkey sausage (sliced)
- 2 tablespoons olive oil
- 1 medium onion (sliced)
- 2 teaspoons minced garlic
- 2–3 medium tomatoes (diced)
- 1 tablespoon cornstarch
- ½ teaspoon thyme
- 1 teaspoon smoked paprika
- 1 tablespoon Creole seasoning
- 1 medium red bell pepper (sliced)
- 1½ –2 cups chicken broth
- 2 tablespoons fresh parsley (chopped)
Instructions
- Cook the fettuccine according to package instructions until al dente. Drain and set aside.
- Season chicken and shrimp with Creole seasoning. Heat olive oil in a heavy-bottomed pan over medium heat.
- Sauté shrimp for about 3–5 minutes until pink; remove from the pan.
- Add chicken thighs and turkey sausage to the same pan, browning on both sides; set aside with shrimp.
- In the same pan, add onions, tomatoes, garlic, and cornstarch. Stir for one minute before adding thyme, smoked paprika, Creole seasoning, bell peppers, chicken broth, chicken, turkey sausage, and Worcestershire sauce.
- Bring to a boil then reduce heat to simmer for about 7–10 minutes until slightly thickened.
- Combine cooked pasta with the jambalaya mixture before serving. Garnish with fresh parsley.
