  • 1 pound salmon (skin removed, cut into 1-inch cubes)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon garlic (minced)
  • 1 ½ cups heavy whipping cream
  • 1 cup parmesan cheese (grated)
  • 4 ounces cream cheese (cubed)
  • Additional Cajun seasoning

  • black pepper
  • crushed red pepper

Instructions

  1. Cook the rigatoni: Boil salted water in a large pot, add rigatoni, and cook until al dente (10-12 minutes). Reserve ½ cup pasta water before draining.
  2. Sear the salmon: In a skillet over medium heat, heat olive oil and add seasoned salmon cubes. Cook for about 3-4 minutes on each side until golden brown. Remove from skillet.
  3. Make the sauce: In the same skillet, melt butter and sauté garlic until fragrant. Add heavy cream and bring to a gentle simmer. Stir in parmesan cheese, cream cheese, Cajun seasoning, salt, black pepper, and crushed red pepper until smooth.
  4. Combine: Add cooked rigatoni and reserved pasta water to the sauce. Gently fold in the seared salmon.
  5. Serve: Dish out into bowls or plates and garnish with parsley and additional parmesan cheese.
