- 2 slices of whole-grain or sourdough bread
- 1 ripe avocado
- 1 teaspoon lemon juice

- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil or butter
- 2 eggs
- ¼ teaspoon garlic powder (optional)
- 1 tablespoon fresh chopped cilantro or parsley
- 1 tablespoon crumbled feta or goat cheese (optional)
- Cherry tomatoes, sliced (optional)
Instructions
Mash the ripe avocado in a small bowl. Add lemon juice, salt, black pepper, and garlic powder (if using). Mix until smooth and creamy.
Toast the bread slices until golden and crisp. Set aside.
Heat olive oil or butter in a skillet over medium heat. Crack the eggs into the pan and cook for about 3 minutes for sunny-side-up, or flip for over-easy. Cook until the whites are set and the yolks are still slightly runny.
Spread the mashed avocado evenly over the toasted bread. Top each slice with a fried egg.
Sprinkle with red pepper flakes, fresh herbs, and crumbled cheese if using. Add sliced cherry tomatoes for extra freshness.
Serve immediately while the toast is warm and crispy.
