Ingredients

  • 8 oz cream cheese, room temperature
  • 12 oz white/vanilla candy melts
  • 4 oz orange candy melts

Instructions

  1. Heat treat the carrot cake mix by microwaving it in two intervals of 30 seconds, stirring after each until cool.
  2. In a mixing bowl, beat the cream cheese until smooth (about 2-2½ minutes).
  3. Gradually combine the cooled cake mix with the cream cheese until fully incorporated.
  4. Chill the mixture tightly covered in the refrigerator for 2 hours.
  5. Line a baking sheet with parchment paper and scoop out tablespoon-sized balls of the mixture.
  6. Roll each ball and place on the prepared sheet.
  7. Melt the white candy melts and coat each ball, tapping off excess coating before placing them back on the baking sheet.
  8. Melt the orange candy melts and drizzle over each coated bite.
  9. Return to the refrigerator until set.
