Instructions

Step 1: Make the Cheesecake Filling

  1. In a bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
  2. Scoop small teaspoons of the mixture onto a parchment-lined plate and freeze for at least 30 minutes.

Step 2: Make the Cookie Dough

  1. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  2. In a separate large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. Fold in the grated carrots and nuts.
  5. Gradually mix in the dry ingredients until a soft dough forms. Chill for 30 minutes.

Step 3: Assemble the Cookies

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop out 1 ½ tablespoon of cookie dough, flatten it slightly, and place a frozen cheesecake piece in the center.
