  • 3/4 cup finely grated carrot (23 medium carrots)
  • 1/3 cup shredded sweetened coconut
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cream cheese, chilled
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine browned unsalted butter with granulated and brown sugars until well mixed. Add the egg and vanilla extract; mix until smooth.
  3. In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture and fold in grated carrot and shredded coconut.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet with space between each cookie.
  6. Bake for about 10 minutes or until golden around the edges. Let cool completely.
  7. For the filling, whip softened butter and chilled cream cheese together until smooth. Gradually add powdered sugar while mixing; stir in vanilla extract and heavy cream until fluffy.
  8. Spread or pipe cream cheese buttercream onto one cookie and top with another to form a sandwich.
