- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon

- 3/4 cup finely grated carrot (2–3 medium carrots)
- 1/3 cup shredded sweetened coconut
- 1/2 cup unsalted butter, softened
- 1/4 cup cream cheese, chilled
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine browned unsalted butter with granulated and brown sugars until well mixed. Add the egg and vanilla extract; mix until smooth.
- In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture and fold in grated carrot and shredded coconut.
- Scoop tablespoon-sized portions onto the prepared baking sheet with space between each cookie.
- Bake for about 10 minutes or until golden around the edges. Let cool completely.
- For the filling, whip softened butter and chilled cream cheese together until smooth. Gradually add powdered sugar while mixing; stir in vanilla extract and heavy cream until fluffy.
