  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, brown sugar, cinnamon, nutmeg, baking soda, baking powder, and salt.
  3. In another bowl, whisk together vegetable oil, eggs, and vanilla extract until smooth. Fold in grated carrots.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fill each muffin liner about two-thirds full with batter and bake for approximately 20 minutes or until golden brown.
  6. To prepare the glaze, warm cream cheese in a microwave-safe bowl for about 30 seconds and mix in powdered sugar and vanilla extract. Add milk to adjust the consistency if necessary.
  7. Once cooled slightly, dip muffin tops into the cream cheese glaze.
