  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • Italian herbs, thyme, parsley, salt, and pepper

Instructions

  1. In a large pot over medium heat, melt butter or olive oil. Add diced onion with a pinch of salt and pepper; sauté for about 5 minutes until soft. Stir in minced garlic for another minute.
  2. Incorporate the chopped celery, carrots, potatoes, Italian herbs, salt, and pepper into the pot. Cook for an additional 2-3 minutes to enhance flavors.
  3. Pour in vegetable broth and bring to a boil. Reduce heat to simmer, cover with a lid, and cook for approximately 20 minutes.
  4. Allow soup to cool slightly before blending about one cup until smooth using a stand blender or hand blender.
  5. Return blended portion to the pot; mix well and adjust seasoning as needed. Stir in chopped parsley.
  6. Serve hot topped with freshly ground black pepper and extra parsley if desired.
