Ingredients

For the Pumpkin Bread:
• 1 ¾ cups all-purpose flour
• 1 tsp baking soda
• ½ tsp baking powder
• ½ tsp salt
• 1 tbsp pumpkin pie spice
• 1 tsp ground cinnamon
• 1 tsp ground ginger
• ½ tsp ground cardamom
• ¼ tsp ground cloves
• ¼ tsp ground black pepper (optional, for chai warmth)
• 2 large eggs
• 1 cup canned pumpkin puree (not pumpkin pie filling)
• ½ cup pure maple syrup
• ½ cup brown sugar
• ½ cup vegetable oil or melted coconut oil
• ¼ cup milk (dairy or plant-based)
• 1 tsp vanilla extract

Optional Add-ins:
• ½ cup chopped nuts (pecans or walnuts)
• ½ cup chocolate chips
• ¼ cup dried cranberries

Maple Glaze (Optional):
• ½ cup powdered sugar
• 1–2 tbsp maple syrup
• A splash of milk to thin, if needed


Instructions

Step 1: Preheat & Prepare Pan

  1. Preheat oven to 350°F (175°C).

  2. Grease a 9×5 inch loaf pan or line with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, whisk together flour, baking soda, baking powder, salt, and all the spices.

  2. This chai spice blend gives the bread its warm, cozy depth.

Step 3: Combine the Wet Ingredients

  1. In a separate bowl, whisk together eggs, pumpkin puree, maple syrup, brown sugar, oil, milk, and vanilla extract until smooth.

Step 4: Mix & Fold

  1. Add the wet mixture to the dry ingredients and stir gently until just combined.

  2. If using, fold in nuts, chocolate chips, or cranberries.

Step 5: Bake the Bread

  1. Pour the batter into the prepared loaf pan and smooth the top.

  2. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

  3. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 6: Add the Glaze (Optional)

  1. In a small bowl, whisk together powdered sugar and maple syrup to form a glaze.

  2. Drizzle over the cooled bread and let set before slicing.

Step 7: Slice & Serve

  1. Cut into thick slices and serve with coffee, tea, or a glass of milk.

  2. Enjoy warm or room temperature—it’s delicious either way.

Notes

Don’t Overmix – Stir just until combined to avoid dense bread.
Use Pure Pumpkin – Make sure it’s 100% pumpkin puree, not pumpkin pie filling.
Customize – Try different nuts, seeds, or dried fruits to make it your own.
Store Properly – Wrap tightly to keep the bread moist and fresh.
