Ingredients
For the Pumpkin Bread:
• 1 ¾ cups all-purpose flour
• 1 tsp baking soda
• ½ tsp baking powder
• ½ tsp salt
• 1 tbsp pumpkin pie spice
• 1 tsp ground cinnamon
• 1 tsp ground ginger
• ½ tsp ground cardamom
• ¼ tsp ground cloves
• ¼ tsp ground black pepper (optional, for chai warmth)
• 2 large eggs
• 1 cup canned pumpkin puree (not pumpkin pie filling)
• ½ cup pure maple syrup
• ½ cup brown sugar
• ½ cup vegetable oil or melted coconut oil
• ¼ cup milk (dairy or plant-based)
• 1 tsp vanilla extract
Optional Add-ins:
• ½ cup chopped nuts (pecans or walnuts)
• ½ cup chocolate chips
• ¼ cup dried cranberries
Maple Glaze (Optional):
• ½ cup powdered sugar
• 1–2 tbsp maple syrup
• A splash of milk to thin, if needed
Instructions
Step 1: Preheat & Prepare Pan

Preheat oven to 350°F (175°C).

Grease a 9×5 inch loaf pan or line with parchment paper.
Step 2: Mix the Dry Ingredients

In a large bowl, whisk together flour, baking soda, baking powder, salt, and all the spices.

Step 3: Combine the Wet Ingredients

In a separate bowl, whisk together eggs, pumpkin puree, maple syrup, brown sugar, oil, milk, and vanilla extract until smooth.
