Ingredients
- 1 ½ pounds ground beef (80/20)
- 3 red bell peppers (chopped)
- 1 sweet onion (chopped)
- 2 poblano peppers (chopped and deseeded)
- Few tablespoons avocado oil
- 10 ounces heavy cream
- 8 ounces white queso (cut into chunks)
- 1 can (8 ounces) Rotel
- American cheese slices
- Slider buns
- Garlic aioli
Instructions
- Form the ground beef into large patties that are about ½ inch larger than slider buns. Season and refrigerate for 30 minutes.
- Heat avocado oil in a griddle; sauté chopped peppers and onions until softened and caramelized. Set aside.
- Warm heavy cream in a saucepan; whisk in queso until melted. Stir in Rotel, season, and keep warm.
- Cook the beef patties on medium-high heat for about 4-5 minutes per side, topping with sautéed vegetables and cheese to melt.
- Toast slider buns until golden brown; spread garlic aioli on the bottom bun.
- Assemble by placing the beef patty on each bun and drizzling warm queso over the top.
