  • ¾ cup shredded carrots
  • ¾ cup diced celery
  • 3 cups chicken broth
  • 4 cups diced potatoes
  • 12 ounces pepper jack Velveeta cheese
  • 1½ cups milk
  • ¼ cup sour cream

Instructions

  1. In a saucepan, brown the ground beef over medium-high heat until cooked. Drain any excess fat.
  2. In the same pan, melt 1 tablespoon of butter and sauté onion, carrots, celery, dried basil, and parsley until tender (about 10 minutes). Add minced garlic and cook for another minute.
  3. Stir in chicken broth and diced potatoes with the browned beef. Bring to a boil, then reduce heat. Cover and simmer for 10–12 minutes until potatoes are tender.
  4. In a skillet, melt remaining butter; whisk in flour to create a roux. Cook for 3–5 minutes until bubbly.
  5. Mix the roux into the soup, stirring while boiling for about 2 minutes.
  6. Lower heat; add Velveeta cheese cubes, milk, salt, and black pepper. Stir until cheese melts completely. Remove from heat and blend in sour cream before serving.
