- 2 slices turkey turkey bacon, fat removed and chopped
- 3 shallots, finely diced
- 1 carrot, finely diced
- 2 small stalks of celery, finely diced
- 3 cloves of garlic, crushed
- 400g extra lean ground beef
- 1/2 tablespoon dried mixed herbs
- 400g canned chopped tomatoes
- 3 tablespoons tomato paste
- 1 tablespoon balsamic vinegar
- 240ml chicken or beef stock
- 500g gnocchi
- 120g grated mature cheddar cheese
- Olive oil cooking spray
- Salt and black pepper
- Fresh basil leaves for garnish
Instructions
- Preheat your oven broiler. Spray a frying pan with olive oil and heat over medium-high.
- Add the turkey turkey bacon and cook until golden brown; remove and set aside.
- In the same pan, add shallots, carrot, and celery; sauté until softened.
- Stir in garlic and ground beef; cook until browned.
- Return turkey turkey bacon to the pan along with mixed herbs, chopped tomatoes, tomato paste, sweetener (if using), stock, and balsamic vinegar. Bring to a boil, then cover and simmer for 20 minutes.
- Add gnocchi to the sauce and stir well; cover and simmer for an additional 5–8 minutes.
- Taste and adjust seasoning before transferring to a baking dish.
- Sprinkle grated cheddar on top and broil for about 4 minutes until melted and golden.
- Garnish with torn basil leaves before serving.
