Ingredients

  • lbs Brussels sprouts, trimmed and halved

  • 2 tbsp olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp butter

  • 2 cloves garlic, minced

  • 1 cup heavy cream

  • 1 tsp Dijon mustard

  • 1½ cups shredded mozzarella cheese

  • ½ cup grated parmesan cheese

  • ¼ tsp red pepper flakes (optional)

  • 2 tbsp chopped parsley (for garnish)

Optional Add-ins:

  • ½ cup cooked bacon crumbles

  • ¼ cup caramelized onions

  • ¼ cup cream cheese for extra richness

  • Bread crumbs for a crunchy topping


Instructions

Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Lightly grease a baking dish or casserole dish.

Step 2: Roast the Brussels Sprouts
Toss Brussels sprouts with olive oil, salt, and pepper.
Spread on a baking sheet and roast for 20–25 minutes, flipping halfway through, until browned and tender.

Step 3: Prepare the Creamy Cheese Sauce
While sprouts roast, melt butter in a skillet over medium heat.
Add garlic and sauté for 1 minute until fragrant.
Pour in heavy cream and stir in Dijon mustard.
Simmer for 2–3 minutes, then remove from heat and stir in 1 cup mozzarella and half of the parmesan cheese until melted and smooth.

Step 4: Assemble the Bake
Transfer roasted Brussels sprouts to the prepared baking dish.
Pour the cheese sauce evenly over the sprouts.
Top with remaining mozzarella and parmesan. Sprinkle with red pepper flakes if using.

Step 5: Bake Until Bubbly
Bake uncovered for 15–18 minutes, until the cheese is melted, bubbly, and golden brown on top.

Step 6: Garnish & Serve
Let cool for a few minutes.
Garnish with chopped parsley and serve hot.
